Wednesdays are becoming one of my favorite days of the week!  Our Heart Group meets here every week and we always have such wonderful food.  This week we had Mexican.  I made empanadas and I let Reed make one for himself.

I love these little hands!

My empanadas turned out pretty good.  I bought the dough in the freezer section at Publix.  The brand is GOYA and I got the recipe from Paula Deen (here).  I tried following the directions exactly and the filling seemed kind of bland to me.  So I added a can of RoTel tomatoes, drained.  Then before I BAKED the empanadas, I brushed melted butter on top and sprinkled them with Taco Seasoning.  The recipe says to fry them, but I baked mine at 350 for about 10 minutes.
